Riding the Wave: How Florida’s Culture Shaped Untamed Waters Brewery

Alison and Jordan Hernandez’s love story started in the sunshine and salt air of Florida, where they bonded over music, food, and—of course—craft beer. Alison was working at a South Florida brewery, while Jordan perfected his homebrews, each developing a deep appreciation for the art and running of a brewery.

"Everything from the culture there such as the Spanish/Latino/Hispanic influence on art, architecture, cuisine have a heavy influence for us along with climate and the natural environment there." - Jordan and Alison

But their inspiration goes beyond just brewing. The Florida landscape—the pristine lakes, endless beaches, and untamed beauty—left a mark on them. Even more, the culture of the ‘90s and early 2000s shaped their creative vision. The skating and surfing scene, bold street art, and the electric energy of the music from that era all inspired Untamed Waters Brewing, influencing everything from their branding and atmosphere to the very beer they craft.

"Also growing up in the 90s and early 2000s where things like skating, surfing and that era’s general counter-culture were popular therefore had major affect on art, music leading to some of our vibe and style too." - Jordan and Alison

Now, in Fort Mill, they’re bringing that free-spirited, Florida-inspired vibe to the local craft beer scene.

Navigating the Currents: Balancing Life, Business, and Family.

Untamed Waters Family

Balancing life is a challenge for anyone, but for business owners, it’s a whole different game. Building, running, and operating a brewery is no easy feat—especially when juggling full-time jobs and family life. For Alison and Jordan Hernandez, the journey has been anything but smooth sailing, yet they’ve found a way to navigate these Untamed Waters together.

"It’s certainly not easy and that’s always a moving target. But we try our best to be really intentional yet also flexible with how and why we do things. So we constantly need to prioritize often and best that we can."  - Jordan and Alison

Through teamwork, trust, and an unshakable passion for their craft, they’ve struck the perfect balance—leaning on each other to keep their dream afloat. It’s not just about making great beer; it’s about building a life and a community that reflects who they are.

As Alison and Jordan Hernandez build their new life in Fort Mill, they’ve been met with open arms by the community—and they’re ready to give back in the best way they know how. Just as craft beer brought them together, they hope Untamed Waters Brewing will do the same for others.

With a welcoming atmosphere, Latin-inspired flavors, and, of course, some damn good beer, they’re creating more than just a brewery—they’re building a space where friends, family, and strangers can connect over a shared love for great food, great drinks, and even better company.

"By and large the most rewarding has been the local community’s embrace and support of us. That’s everyone from the craft beer community such as all craft beer patrons and fans, the local homebrew club, and our fellow YoCo Brew Trail brewery friends for example. Also the local residents, customers and business owner neighbors, etc. Seeing people enjoy being at our place whether the ambiance, service, food, and company let alone of course the beer have been humbling."
